Career History: Owner, Head Brewer, Caius Farm Brewery

Caius Jordan Mergy, Head Brewer and Owner at Caius Farm Brewery, has been recognized as a Marquis Emerging Leader for their contributions and achievements in the field of brewing.

It was during his undergraduate studies at Middlebury College that Mr. Mergy found his passion for craft beer. An accomplished student, he earned a Bachelor of Arts in classics Greek and Latin language, and graduated summa cum laude, in 2017. But, in his spare time, he was dedicated to home brewing and read extensively on the subject, ultimately producing his own drinks and envisioning the future of a brewery.

Mr. Mergy was subsequently accepted into a master’s program in classical archaeology at the University of Oxford in the United Kingdom. During his year there, he continued to explore his passion, visited various breweries and educated himself even more about the process. Upon graduating in 2018, he pursued the Master Brewer Program at the Siebel Institute in Chicago and the Doemens Academy in Munich, Germany, where he immersed himself in the craft and further refined his brewing knowledge and expertise in the industry—he developed specializations in German lager brewing and barrel-aged beer. As he honed his skills, he also created a logo for his dream brewery, drawing inspiration from his classical studies, based on an ancient Roman mosaic he admired in the UK. He launched his brewing career in California as a production brewer at Devil’s Canyon Brewing Company, but at the onset of the COVID-19 pandemic, he returned to his home state of Connecticut in 2020.

There, Mr. Mergy sought locations to establish his business, with his grand vision emphasizing a deep connection to the land, leading him to discover an old, dilapidated farm in Branford that was shuttered for more than two decades. Finding the site of his brewery, he broke ground on the transformation in 2022 and named it Caius Farm in honor of the historic agricultural property.

Today, the brewery is a popular destination in the area, offering a variety of original crafted beers, from pales ales to imperial maple stout, all named after figures from Ancient Greece and the Roman Empire, and myriad events throughout the year. In his role, Mr. Mergy experiments continuously with ingredients and techniques to refine styles and expand brewing knowledge; pushes creative boundaries through hands-on brewing trials and process experimentation; and manages administrative tasks such as emails, ordering, and inventory to ensure daily, weekly, and monthly operational readiness. In addition, he organizes operations proactively to minimize production disruptions and unforeseen challenges, brews beer and oversees all stages of production, including transfers and packaging, conducts sensory tastings across barrels and tanks to assess quality and consistency, and performs laboratory work, including yeast cell counts, contamination testing, alcohol analysis, and carbonation testing.

As a testament to his success, Mr. Mergy received the World Beer Cup Award in 2025 for his Elagabalus Bourbon Barrel Aged Imperial Stout, which he reflects on as a career highlight, emphasizing the artistry involved in brewing. According to him, the characteristics of the barrel and base beer have a significant influence on the final product. He noted that even using the same type of barrel and base beer, the taste can result in two distinctly different beers after a year. Creativity and ingenuity play major roles in the blending process and creation of the final product. The day he crafted the award-winning blend was one of the most enjoyable of his brewing journey. He also previously won two silver medals at the Denver International Beer Competition and bronze, silver, and gold medals at the Great International Beer Competition.

Looking toward the future, Mr. Mergy strives to continue experimenting and expanding his knowledge in brewing. He is eager to learn more and explore a variety of new ingredients, with a particular focus on sourcing locally. By incorporating these ingredients in his future beers, he hopes to highlight the flavors that local products can contribute to the final creation. His objective is to rigorously challenge his creativity and deepen his craft while highlighting remarkable local ingredients that may otherwise go unrecognized. His foundation has been the unwavering support of his family and friends—especially his wife, Brooke—whose encouragement and collaborative exchange of ideas have allowed him to achieve his goals.
